This is a great breakfast and really good to enjoy after a workout too, as it provides a great combination of carbohydrate and protein to refuel your muscles and the raspberries provide vitamin C and polyphenols to reduce inflammation and promote recovery. The walnuts are a good source of omega 3.
Ingredients (serves 1):
150g greek yoghurt
1tbsp sultanas or raisins
1 small apple grated
Half a small banana
A few chopped walnuts
Drizzle of honey (optional)
Mix the yoghurt, oats and raisins / sultanas in a small bowl. Cover and leave overnight.
When ready to eat, stir in the grated apple, raspberries and bananas.
Drizzle with the honey (if using) and scatter over the chopped walnuts.
Eat and enjoy!!
