Bircher muesli

This is a great breakfast and really good to enjoy after a workout too, as it provides a great combination of carbohydrate and protein to refuel your muscles and the raspberries provide vitamin C and polyphenols to reduce inflammation and promote recovery. The walnuts are a good source of omega 3.

Ingredients (serves 1):

  • 150g greek yoghurt

  • 25g oats

  • 1tbsp sultanas or raisins

  • 1 small apple grated

  • 50g raspberries

  • Half a small banana

  • A few chopped walnuts

  • Drizzle of honey (optional)


Method:

  • Mix the yoghurt, oats and raisins / sultanas in a small bowl. Cover and leave overnight.

  • When ready to eat, stir in the grated apple, raspberries and bananas.

  • Drizzle with the honey (if using) and scatter over the chopped walnuts.

Eat and enjoy!!
