So I love cauliflower and was quite excited when I found this recipe in the Green Roasting Tin book (just vegan and vegetarian recipes). And this was really easy to make. Really liked the crispy leaves with it and goes so well with a dollop of greek yoghurt against the spicy harissa.
Ingredients (serves 4, easily halved)
1 large cauliflower
1 red onion quartered or sliced
1 tbs olive oil
1 tsp sea salt
4 tsp harrisa
125g soft goats cheese
30g pine nuts roughly chopped
20g panko breadcrumbs
2 tbsp flat-leaf parsley chopped
Preheat oven to 180 fan / 200
Remove greens from cauliflower, wash and put them into the roasting tin with the red onion. Mix with the olive oil and season with salt.
Slice the cauliflower from top to bottom into four thick 'steaks'.
Rub each side of the steaks with half a tsp of harissa. Season with salt and press the goats cheese into each steak. Add them to the roasting tin with the leaves and onion.
Mix the pine nuts, panko breadcrumbs and parsley and scatter over the steaks. Press down slightly.
Drizzle olive oil over the top and roast for 25-30 mins until the tops are golden brown and the steak is cooked through.
Serve the steaks with the crispy leaves and onions alongside, and optional with a dollop of greek yoghurt and couscous.
