Fruit & nut energy bars

These little energy bars are really easy to make and there are all sorts of different combos you can come up with. Here I give you two fruit and nut options to try. These are good pre or post workout snacks or also pretty decent if you've got strong cravings for sweet stuff in line with your menstrual cycle (if you have one).

Ingredients (makes approx 8):


Chocolatey date and almond:

  • 125g ready to eat soft or medjool dates

  • 100g ground almonds

  • 1 tbsp cacao or cocoa powder

  • 1 tsp vanilla extract


Pecan pie:

  • 125g ready to eat soft or medjool dates

  • 50g pecans

  • 50g ground almonds



Method:

  • Put all the ingredients into a food processor or high powdered blender and blitz for about a minute until crumbly and combined

  • You may need to stop and scrape down the sides so it all gets mixed in. Add a tbsp of water to it if it appears to dry - you want it to be able to form a ball.

  • Tip out the mixture onto a piece of baking paper and put another over the top. Roll out so it is about 1 cm thick. Or you can press in to a lined square tin (18cm x 18cm).

  • Let it chill in the fridge for around an hour

  • Peel of the baking paper and then slice into bars of approx 10 x 2 cm or whatever works!

  • You can store these in the fridge for as much as two weeks, or you can freeze them.
