Pea and courgette soup

This is a really healthy soup with lots 'green' and nutrients - including vitamin C and protein (peas), and you can use any old green veg you've got in the fridge too. I used a mix of spinach and lettuce. It's also really quick and easy to make.


Ingredients (serves 4):

  • 2 tbsp olive or rapeseed oil

  • 1 onion finely chopped

  • 2 crushed garlic cloves

  • 125g of 'greens' - shredded cabbage, spinach, greens, lettuce, kale..

  • 2 medium courgettes sliced

  • 1 litre veg stock (or 2-3 tsp veg bouillon dissolved in 1 litre of hot water)

  • 200g frozen peas

  • A squeeze of lemon juice

  • Freshly ground black pepper


To serve:

  • 1 tbsp per person of greek yoghurt

  • wholegrain bread


Method:

  • Heat the oil in a large pan over a low - med heat and cook the onion for approx 5 mins.

  • Add the garlic and cook for a further minute then add the 'greens' you're using, courgettes and the veg stock

  • Bring to the boil and then cover and simmer for 5 mins

  • Add the peas and cook for another 3-5 mins until all the veg is tender

  • Add a squeeze of lemon juice and then either blend or liquidise the soup

  • Add black pepper to taste and then serve in to blows with a dollop of greek yoghurt and wholegrain bread
