Smoked mackerel & chickpea salad

This salad is super simple and quick to make and is great on the nutrient front: pulses, oily fish, lots of veg, healthy fats from the fish and olive oil, and protein and fibre too. Feel free to include / exclude ingredients or your choice to make it your own! (in this pic I have radish instead of red onion as that's what I had in the fridge that day!)


Ingredients (serves 2):

  • 2 ready to eat smoked mackerel fillets

  • One 400g tin chickpeas

  • Grated zest of one lemon

  • 1/2 a red onion, finely diced

  • A large packet of mixed salad leaves

  • handful cherry tomatoes, halved

  • handful green pitted olives

  • 1 tbsp olive oil

  • freshly ground sea salt and black pepper

  • juice of half a lemon

Method:

  1. Drain and rinse the chickpeas and add the lemon zest.

  2. Empty the salad leaves into a bowl and add the chickpeas

  3. Tear the mackerel into chunks and add to the bowl along with the onion, tomatoes and green olives

  4. Mix the oil and lemon in a small bowl and add a good grinding of salt and black pepper. Pour over the salad and using your hands, mix to coat everything in the dressing.

  5. Serve and enjoy!
