Smoked salmon, spinach and egg "muffins"

These are a great savoury option for breakfast, lunch or even a snack. They're a fab low carb / high protein option and will great for supporting blood sugar balance. You can make these in advance and they're really easy to make. You could also experiment with your own ingredients that you'd like to try!


Ingredients (serves 6):

  • 4 eggs

  • 2 slices of smoked salmon, roughly chopped (approx 60g)

  • 2 handfuls of spinach, roughly torn

  • 1 handful of grated cheese (I used cheddar & mozzarella)

  • Half a tsp of freshly ground black pepper

  • Salt to taste if needed, but salmon and cheese can be salty so only add if needed

  • olive oil

Method:

  • Preheat oven to 200 degrees / 180 fan

  • Crack the eggs into a bowl and whisk

  • Add the torn spinach, smoked salmon, pepper and cheese and mix into the egg

  • Lightly brush the inside of 6 muffin tins (half a 12 tray) with olive oil

  • Divide the mixture up between the 6 holes

  • Bake in the oven for about 20 mins until cooked and golden

  • Slice around with a knife to loosen and scoop out

  • Enjoy on their own or with a big leafy salad!
