Super simple bean and tomato stew

This takes about 15 minutes to make and almost always I've got these ingredients in my fridge / cupboard! Makes a great, quick mid week meal.

Ingredients (serves 2):

  • 1 tbsp olive oil

  • 1 onion sliced

  • 1 crushed garlic clove

  • 1 carrot diced

  • Small red pepper diced (or optional)

  • 400g chopped tomatoes

  • 400g can of beans - red kidney, bortolli or cannelini drained

  • 1 tsp vegetable bouillon (I always have marigold in my cupboard)

  • 1 tsp dried thyme

  • 2 tbsp greek yoghurt

  • Rice to serve, or quinoa (like mine), and / or a green vegetable such as brocolli or mangetout.

Method:

  • Heat the oil in a large pan. Add the onion, garlic, carrot and pepper and saute for 5 mins until the veg has softened

  • Add the tomatoes, beans, bouillon and thyme. Stir and bring to the boil.

  • Simmer for 10 mins until the veg is tender and the sauce has reduced a little.

  • Serve with your rice / grain of choice and / or green vegetables, and with a dollop of greek yoghurt.
