Super simple bean and tomato stew

This takes about 15 minutes to make and almost always I've got these ingredients in my fridge / cupboard! Makes a great, quick mid week meal.

Ingredients (serves 2):
1 tbsp olive oil
1 onion sliced
1 crushed garlic clove
1 carrot diced
Small red pepper diced (or optional)
400g chopped tomatoes
400g can of beans - red kidney, bortolli or cannelini drained
1 tsp vegetable bouillon (I always have marigold in my cupboard)
1 tsp dried thyme
2 tbsp greek yoghurt
Rice to serve, or quinoa (like mine), and / or a green vegetable such as brocolli or mangetout.
Method:
Heat the oil in a large pan. Add the onion, garlic, carrot and pepper and saute for 5 mins until the veg has softened
Add the tomatoes, beans, bouillon and thyme. Stir and bring to the boil.
Simmer for 10 mins until the veg is tender and the sauce has reduced a little.
Serve with your rice / grain of choice and / or green vegetables, and with a dollop of greek yoghurt.
