This salad is perfect for those colder months when you want something a bit warmer to fill you up! It's vegetarian but you still get your protein from the lentils and nuts, plus iron, vitamin c and omega-3.
This is super easy to make and really satisfying / filling - a great vegetarian option to fuel and nourish your body.
Ingredients (serves 2 - easily halved):
250g packed of ready to eat lentils (I used merchant gormet)
Either half a red onion, 4 spring onions or 8 radishes finely chopped
125g cherry tomatoes, halved
Bag or four large handfuls of salad leaves - including watercress or spinach preferably
50g nuts / seeds of your choice (I use walnuts, cashews, pine nuts or mixed seeds)
Juice of half a lime
2 tbsp olive oil
1 tbsp wine vinegar
Method:
Warm the lentils in a pan with 2 tbsp of water for a few minutes. Drain and transfer to a bowl
Add the onions/radishes, tomatoes, nuts.
Mix together the lime juice, olive oil and wine vinegar and add to the lentil mix.
Put the salad leaves on a plate and top with the lentil salad on top.
