Apple & oat muffins

These are a great pre workout (or any time) snack with each muffin around 180 cals, 29g carbs & 4g protein. The oats offer slow releasing complex carbohydrate to help keep you going which is why they're great before a workout or to replenish muscle glycogen stores post workout.


Ingredients (makes 12):

  • 175g self raising flour

  • 125g oats

  • 125g light brown sugar

  • Half tsp salt

  • 4 tbsp rapeseed oil

  • 1 tsp vanilla extract

  • 1 large egg

  • 250ml milk

  • 125g grated apples

Method:

  • Heat the oven to 190 degrees / 170 fan

  • Line a 12 muffin tins with paper muffin cases

  • Combine the flour, oats, sugar, salt in a bowl

  • In another bowl mix together the oil, vanilla extra, egg and milk and then add to the oat mix

  • Add in the apples and mix in

  • Divide the mixture up between the 12 cases, they'll be about two thirds full.

  • Bake in the oven for about 20 mins until golden and a nice / skewer comes out dry

  • Allow to cool before eating and store in an air tight container.
