These are a great pre workout (or any time) snack with each muffin around 180 cals, 29g carbs & 4g protein. The oats offer slow releasing complex carbohydrate to help keep you going which is why they're great before a workout or to replenish muscle glycogen stores post workout.
Ingredients (makes 12):
175g self raising flour
125g oats
125g light brown sugar
Half tsp salt
4 tbsp rapeseed oil
1 tsp vanilla extract
1 large egg
250ml milk
125g grated apples
Method:
Heat the oven to 190 degrees / 170 fan
Line a 12 muffin tins with paper muffin cases
Combine the flour, oats, sugar, salt in a bowl
In another bowl mix together the oil, vanilla extra, egg and milk and then add to the oat mix
Add in the apples and mix in
Divide the mixture up between the 12 cases, they'll be about two thirds full.
Bake in the oven for about 20 mins until golden and a nice / skewer comes out dry
Allow to cool before eating and store in an air tight container.
