Baked oats - chocolate!

I've posted a few of these variations and recipe on baked oats - they are my winter or 'on the go' favourite breakfast at the moment. As so easy to make in advance and take with you or have when you've only got a few minutes in the morning. Here is a chocolate version for when you want that sweet chocolate fix!

Ingredients (makes 4 large servings or 6 medium):
180g rolled oats
500 ml boiling water
2 bananas
1 tbsp chia seeds mixed with 1 tbsp water
2 scoop (approx 25g) chocolate protein powder or 2-3 heaped tbs of cacao powder (optional)
50g chocolate chips or cacao nibs
40g nuts chopped - your choice: walnuts, almonds, etc
2 tsp ground cinnamon
1 tsp baking powder
250ml milk (any type incl plant options - you will need less if you don't use protein powder)
Method:
Preheat oven to 180/160 fan and line a 20cm square baking with with baking paper
Put the oats in a mixing bowl with 500ml boiling water, stir and leave to stand for 10-15 mins
In another bowl, peel and mash the bananas til as smooth as poss.
Stir in the chia seed mixture and protein powder if using and then add to the softened oats and stir until its all well mixed together.
Add the remaining ingredients to the blow and stir well, then pour in to the tin and ensure its level.
Bake in the oven for 35-40 mins until golden brown on the top. Allow to cool - it firms up more when cooling and then chop in to squares.
These will keep well in the fridge and can also be frozen. Really easy to reheat in the microwave too for a warm option - and in my opinion they're the best warm :)
