Baked yoghurt & berry slices

If you like cheesecake you will like these! So easy to make and a high protein snack or breakfast for on the go!


Ingredients:

  • 500g tub of greek yoghurt

  • 6 eggs

  • 50-60 ml maple syrup or honey

  • 1 tsp vanilla extract

  • 4 tbs plain flour

  • 150g berries - frozen or fresh



Method:

  • Grease a baking dish (approx 20 x 20 cm), and heat the oven to 160-170 degrees.

  • Whisk together in a large bowl, the yoghurt, eggs, maple syrup, vanilla extract and flour until all combined

  • Pour mixtrue in to your baking dish, add the berries on top

  • Bake in the over for 30-40 mins until cooked, the sides are golden brown and the top is set. If it still wobbles a bit that is fine as it sets as it cools down.

  • Allow to cool completely before moving from the baking pan and cutting in to slices

  • Stores in the fridge for around 5 days.
