These sound a little strange but you don't actually taste the chickpeas as the vanilla and chocolate flavours mask any chickpea! The chickpeas offer lots of fibre and some protein, and adding the nut butter gives them the great gooey texture! These make a great snack when you want something sweet and satisfying. Each square is around 120 calories and 4g protein for anyone who is interested!
Ingredients (makes 16):
50g rolled oats
400g can chickpeas drained and rinsed well
125g nut butter (I used peanut)
90ml maple syrup
3 tbsp milk or plank milk alternative
1-2 tsp vanilla extract
pinch of salt
half tsp baking powder
75g dark chocolate chips
Method:
Preheat over to 180/160 fan
Line a square tin (18cm) with baking paper
Put the oats in a food processor bowl and blitz until they turn into flour
Add all the other ingredients except the chocolate chips and process until it resembles a dough
Remove the blade or transfer to another bowl and stir in the chocolate chips with a spoon
Pour into the tin and level out the surface with a knife
Bake for 20-25 mins until golden and leave to cool and firm up
When cooled, slice into 16 squares. Store in the fridge in an air tight container.
