Blueberry & banana protein baked oats

If you like overnight oats, jazzy porridge and such like they you will like these! They're great to make in advance so you've an quick and easy breakfast for on the go or when you've not time to make porridge. Henry also LOVES them so it's a winner in our household - lots of great nutrients to keep you going in the morning. Thanks to Anita Bean for the idea - I'm going to try some variations / combos too and will report back!


Ingredients (makes 4 large servings):

  • 180g rolled oats

  • 500 ml boiling water

  • 2 bananas

  • 1 tbsp chia seeds mixed with 1 tbsp water

  • 2 tbsp maple syprup

  • 1 scoop (approx 25g) vanilla protein powder (optional)

  • 100g fresh or frozen blueberries

  • 40g flaked almonds

  • 2 tsp ground cinnamon

  • 1 tsp baking powder

  • 250ml milk (any type incl plant options)

Method:

  • Preheat oven to 180/160 fan and line a 20cm square baking with with baking paper

  • Put the oats in a mixing bowl with 500ml boiling water, stir and leave to stand for 10-15 mins

  • In another bowl, peel and mash 1.5 bananas til as smooth as poss.

  • Stir in the chia seed mixture, maple syrup and protein powder if you're using it and then add to the softened oats and stir until its all well mixed together.

  • Add the remaining ingredients to the blow and stir well, then pour in to the tin and ensure its level.

  • Slice the reaming half a banana and add the slices on top, you can add extra blueberries if you like too

  • Bake in the oven for 35-40 mins until golden brown on the top. Allow to cool - it firms up more when cooling and then chop in to squares.


These will keep well in the fridge and can also be frozen. Really easy to reheat in the microwave too for a warm option - and in my opinion they're the best warm :)
