Arguably healthier than your usual pancakes made with flour due to the extra protein and fibre you get from the oats and banana. The blueberries bring extra antioxidants and vitamin C. You can experiment with different toppings too and these can also be batch made and frozen for breakfasts when you're in a hurry.
Ingredients (makes 8):
100g rolled oats
1 tsp baking powder
1 mashed banana
2 eggs
150 ml milk (your choice what type)
A little oil or butter for cooking
200g blueberries
Optional topping ideas: crushed nuts, drizzle of honey or maple syrup, extra blueberries, banana or other fruit, or dollop of greek yoghurt...
Method:
Mix together the oats and baking powder in a bowl
Mix the mashed banana with the eggs and milk (or do in a blender) and then add to the oats and mix together
Heat a frying pan and add a little olive oil or butter.
Add large spoonful size blobs of the batter in to the pan and cook until bubbles appear and the edges are cooked
Sprinkle blueberries into each pancake, the flip the pancake and cook for a further 2-3 mins.
Repeat with remaining batter
Serve the pancakes topped with toppings of your choice.
