Carrot & apple muffins

These muffins are a much less sugary version of the classic carrot cake or muffin! They got fruit, nuts and carrots in, and a blend of flours making them actually quite good for you!


Ingredients (makes 12):

  • 125g plain flour

  • 125g wholemeal flour

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • 50ml light olive oil

  • 50g brown sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 200ml milk

  • 2 carrots grated

  • 1 apple grated

  • 75g raisins or sultanas (or a mix!)

  • 50g walnuts or pecans, chopped

  • Oats or chopped nuts for toppings (optional)



Method:

  • Pre heat over to 200 degrees (180 fan).

  • Line 12 muffin trays / tins with paper cases

  • Mix the flours in a bowl with baking powder and cinnamon.

  • In another bowl, mix the oil, sugar, egg, vanilla essence and milk.

  • Stir in the carrot, apple, raisins / sultanas and walnuts, then add to the flour mixture.

  • Stir until combined.

  • Split up the mixture between the cases and then sprinkle with oats and extra nuts if using.

  • Bake for approx 20 mins until the muffins have risen and are golden.
