"Carrot cake" baked oats

This recipe is a carrot cake version of baked oats - and a case of when it is perfectly fine to have cake for breakfast, snack, lunch or dinner. If you like baked oats and you like carrot cake, this one is a winner. My son Henry loves it, without the yoghurt topping though. And yes, it is fine for kids to eat protein powder in small amounts if you use it, but I wouldn't give it to babies / very young children. This cake is a healthy mix of ingredients which will leave you full and satisfied!


Ingredients:


  • 2 bananas mashed

  • 200g oats

  • 480ml milk - any choice

  • 30g vanilla protein powder (optional, reduce milk to around 400ml if not using)

  • 1-2 tbsp honey

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 50g nuts of your choice

  • 1 smallish carrot, grated

  • Greet yoghurt and extra nuts


Method:

  • Add all the ingredients (except the topping ones) in to a baking dish and mix well

  • Bake at 180 degrees for around 30-35 min (might have to test to see if liquid has absorbed)

  • Allow to cool, and then cover with toppings

  • If you aren't going to eat all at once, I'd save adding the topping until when you're ready to eat a slice :)
