Chicken & mozzarella salad

Here is a great salad with loads of potential to bulk up your plate with lots of greens and favourite vegetables. You don't have to use what I have but really any non-starchy veg is good here for a lower carb, higher protein and fibre dish.

Ingredients (for 1):

  • 1 chicken breast

  • 1 large bowl or plate of leafy greens

  • 1 large handful of cherry or plum tomatoes halved

  • About a third of a 'ball' of mozzarella, torn into small chunks

  • balsamic vinegar

  • I've added - avocado, beetroot, peppers, olives

Method:

  • Heat the over to 200/180 fan

  • Season the chicken breast and cook in the over for 20 minutes until cooked through and the juices run clear

  • Remove and leave to cool before slicing into strips

  • Meanwhile create your salad place with the leaves, other vegetables and mozzarella

  • Add the sliced chicken and dress with the balsamic vinegar
