Here is a great salad with loads of potential to bulk up your plate with lots of greens and favourite vegetables. You don't have to use what I have but really any non-starchy veg is good here for a lower carb, higher protein and fibre dish.
Ingredients (for 1):
1 chicken breast
1 large bowl or plate of leafy greens
1 large handful of cherry or plum tomatoes halved
About a third of a 'ball' of mozzarella, torn into small chunks
balsamic vinegar
I've added - avocado, beetroot, peppers, olives
Method:
Heat the over to 200/180 fan
Season the chicken breast and cook in the over for 20 minutes until cooked through and the juices run clear
Remove and leave to cool before slicing into strips
Meanwhile create your salad place with the leaves, other vegetables and mozzarella
Add the sliced chicken and dress with the balsamic vinegar
