This is a very quick and easy meal to make that has lots of protein and energy giving carbs.
Ingredients (serves 2):
One medium sweet potato peeled and cubed
200g caulflower florets
200g butternut squash peeled and cubed
2 tbsp olive oil
Half tsp ground cumin
Half tsp ground turmeric
Half tsp dried chilli flakes
2 chicken breasts
Method
Heat oven to 200/180 fan
Put the sweet potato, cauliflower and squash in a blow, add the olive oil, spices, chilli, and a bit of salt and freshly ground black pepper, and mix until all combined and the veg is coated.
Transfer the veg to a baking tray and bake in the oven for around 10 minutes until they start to colour
Remove the tray from the oven and turn the veg.
Add the chkicken and return to the oven for 20-25 mins until the chicken is cooked through.
Serve and can include salad or any green vegetable on the side!
