Chocolate "hobnobs"

I think these biscuits are a cross between a chocolate hobnob and a digestive! I gave these a go when trying to find a snack that chocolate biscuit loving Rory would enjoy.


Ingredients:

  • 160g oats

  • 50g melted butter or coconut oil

  • 50g sugar / honey

  • 60ml milk

  • 1 tsp baking powder

  • 100g dark chocolate


Method:

  • Preheat oven to 170 degrees

  • Add all the ingredients (except the dark chocolate) to a food processor / blender and blitz

  • Mix until it forms a dough - if too wet, add more oats, if too dry add more milk

  • Roll dough out on a floured surface

  • Using a biscuit cutter, or a cup / glass, cut the dough in to circles

  • Bake for around 15 mins

  • Allow to cool completely

  • Melt the chocolate and then spoon and smooth over the top of your biscuits and you could use a fork to make snazzy patterns!

  • Put in fridge to speed up chocolate hardening. Store in air tight container and eat at their best within a couple of days
