This dish is a great low calorie, high protein, lower carb dish. You do need to like brocolli for this one but you could use cauliflower too for a similar dish!
Ingredients (serves 2):
2-3 tbsp curry powder
6 heaped tbsp of 0% greek yoghurt
2 chicken breasts
1-2 brocolli heads
2 handfuls of chopped or whole almonds (approx 30 almonds)
optional lemon wedges
optional sliced red chilli
Method:
Preheat over to 180/160 fan
Mix 2 tbsp curry powder in a bowl with the greek yoghurt then coat the chicken in the mixture
Line a baking try with tin foil and place the chicken and left over marinade inside
Cook for 20-30 mins until chicken is cooked through and juices are clear
While the chicken is cooking, roughly chop the brocolli head(s) and then blitz in a food processor until it resembles 'rice'
Put the brocolli in a microwavable bowl and cook on high for 2-3 mins
Using a dry frying pan over a high head and toast the almonds until they're browned.
Stir the almonds and a further tbsp of curry powder into the brocolli
Remove chicken from the oven and season with salt and pepper. Cut into slices and serve on top of the brocolli rice.
Top with chilli slices (if using) and lemon wedges for squeezing on the side.
