Curry chicken & brocolli rice

This dish is a great low calorie, high protein, lower carb dish. You do need to like brocolli for this one but you could use cauliflower too for a similar dish!


Ingredients (serves 2):

  • 2-3 tbsp curry powder

  • 6 heaped tbsp of 0% greek yoghurt

  • 2 chicken breasts

  • 1-2 brocolli heads

  • 2 handfuls of chopped or whole almonds (approx 30 almonds)

  • optional lemon wedges

  • optional sliced red chilli

Method:

  • Preheat over to 180/160 fan

  • Mix 2 tbsp curry powder in a bowl with the greek yoghurt then coat the chicken in the mixture

  • Line a baking try with tin foil and place the chicken and left over marinade inside

  • Cook for 20-30 mins until chicken is cooked through and juices are clear

  • While the chicken is cooking, roughly chop the brocolli head(s) and then blitz in a food processor until it resembles 'rice'

  • Put the brocolli in a microwavable bowl and cook on high for 2-3 mins

  • Using a dry frying pan over a high head and toast the almonds until they're browned.

  • Stir the almonds and a further tbsp of curry powder into the brocolli

  • Remove chicken from the oven and season with salt and pepper. Cut into slices and serve on top of the brocolli rice.

  • Top with chilli slices (if using) and lemon wedges for squeezing on the side.
