Here is a dinner that is mega easy and quick but with lots of flavour. And no weird ingredients! Plus you could sub the noodles for a veg version if you wanted - I've not tried this but I'm sure it would work! Let me know if you do try that!
Ingredients (for 2 people):
1 tbs cooking oil (I use olive, avocado or coconut usually for this)
400g approx chicken breast cut into strips or chunks
2 tbsp mild curry powder
1 onion / 3 spring onions / 2 celery sticks chopped (whatever you've got!)
2 clove garlic chopped
Couple of handfuls of mangetout or sugarsnaps (or one of those small bags)
Tray of baby sweetcorn / small bag cut in half
Portion each of egg noodles (either fresh or dried)
Salt and pepper
A lime to squeeze
Method:
Cook the noodles as per instructions if using dried version
Heat the oil in a wok or large frying pan and cook the chicken until no longer pink
Add half the curry powder and coat the chicken
Add the onion, chilli, garlic, mange tout and sweetcorn and fry together for about 2 mins, stirring all the time, until the chicken is cooked through
Add noodles and a splash of water if needed to stop things sticking
Add rest of curry powder and season with salt and pepper
Mix all together, take off the heat, squeeze over the lime juice of a lime
Serve up! Add sprinkle of coriander if you have it / like it!
