Easy chicken dinner with lots of flavour

Here is a dinner that is mega easy and quick but with lots of flavour. And no weird ingredients! Plus you could sub the noodles for a veg version if you wanted - I've not tried this but I'm sure it would work! Let me know if you do try that!



Ingredients (for 2 people):

  • 1 tbs cooking oil (I use olive, avocado or coconut usually for this)

  • 400g approx chicken breast cut into strips or chunks

  • 2 tbsp mild curry powder

  • 1 onion / 3 spring onions / 2 celery sticks chopped (whatever you've got!)

  • 2 clove garlic chopped

  • Couple of handfuls of mangetout or sugarsnaps (or one of those small bags)

  • Tray of baby sweetcorn / small bag cut in half

  • Portion each of egg noodles (either fresh or dried)

  • Salt and pepper

  • A lime to squeeze


Method:

  • Cook the noodles as per instructions if using dried version

  • Heat the oil in a wok or large frying pan and cook the chicken until no longer pink

  • Add half the curry powder and coat the chicken

  • Add the onion, chilli, garlic, mange tout and sweetcorn and fry together for about 2 mins, stirring all the time, until the chicken is cooked through

  • Add noodles and a splash of water if needed to stop things sticking

  • Add rest of curry powder and season with salt and pepper

  • Mix all together, take off the heat, squeeze over the lime juice of a lime

  • Serve up! Add sprinkle of coriander if you have it / like it!
