This super tasty but easy salmon dish is full of healthy fats and protein. I serve with a big leafy salad. I make the seasoning mix and salsa ahead and then when ready to cook it just takes 10 mins.
Ingredients (serves 2):
2 salmon fillets
One avocado sliced
Half a red onion (or small whole) diced
Juice of a lime
1 tsp dried coriander
1 tsp paprika
1 tsp cumin
1 tsp onion powder / granules
1/2 tsp of chilli powder
2 tsp extra virgin olive oil
Salt and pepper
Method:
Mix paprika, cumin, onion powder, chilli powder, salt and pepper in a bowl
Coat salmon in the oil and the seasoning mix
Refrigerate for a minimum of 30 mins
To make salsa - mix the diced onion, avocado, coriander and lime juice in a bowl or whizz up in a blender / food processor. Keep in fridge until ready to use.
Preheat grill
Grill salmon for 10 mins or until cooked through.
Serve with the salsa on top.
