Easy tasty salmon and avocado salsa

This super tasty but easy salmon dish is full of healthy fats and protein. I serve with a big leafy salad. I make the seasoning mix and salsa ahead and then when ready to cook it just takes 10 mins.



Ingredients (serves 2):

  • 2 salmon fillets

  • One avocado sliced

  • Half a red onion (or small whole) diced

  • Juice of a lime

  • 1 tsp dried coriander

  • 1 tsp paprika

  • 1 tsp cumin

  • 1 tsp onion powder / granules

  • 1/2 tsp of chilli powder

  • 2 tsp extra virgin olive oil

  • Salt and pepper

Method:

  • Mix paprika, cumin, onion powder, chilli powder, salt and pepper in a bowl

  • Coat salmon in the oil and the seasoning mix

  • Refrigerate for a minimum of 30 mins

  • To make salsa - mix the diced onion, avocado, coriander and lime juice in a bowl or whizz up in a blender / food processor. Keep in fridge until ready to use.

  • Preheat grill

  • Grill salmon for 10 mins or until cooked through.

  • Serve with the salsa on top.
