Feta & beetroot salad

I do love a good salad and this combines two of my favourite salady ingredients - beetroot and feta. Feel free to adapt to suit you and what you like but here is the base recipe to get you started:


Ingredients (serves 1):

  • 2 very large handfuls of salad leaves or a salad bag

  • 2 whole precooked / steamed beetroots roughly chopped

  • Approx 60g feta, diced or crumbled

  • One third of a cucumber, chopped

  • Any other veggies you'd like to add

  • Optional - tbsp of mixed seeds or handful of croutons


Dressing

  • 1tsp honey

  • 1 tsp olive oil

  • 0.5 tsp mustard


Method:

  • Put the salad leaves in a bowl plate

  • Add the chopped beetroot, feta and cucumber (plus any extra veggies you fancy)

  • Put all the dressing ingredients into a small bowl and mix well

  • Drizzle the dressing over the top of your salad

  • Top with any extra seeds or croutons

  • Enjoy!
