Flavoursome dhal with almonds

This dhal recipe is super easy to make, warming and has a lot of flavour and fab nutrients. It's high in fibre, protein and packed with vitamins. A great mid week recipe and for fueling the body for life and exercise! I forgot to take a pic when I made this but will do next time!


Ingredients (serves 2):

  • 1 tbsp olive oil

  • 1 chopped onion

  • 1 crushed garlic clove

  • Half tsp ground cumin

  • 1tsp ground coriander

  • 125g red lentils

  • 400ml veg stock

  • 2 diced carrots

  • 125g frozen peas

  • Big squeeze of lemon juice

  • Salt to taste

  • Handful of fresh chopped coriander

  • 50g almonds roughly chopped and toasted


Method:

  • Heat the oil in a heavy based pan and saute the onions for 5 mins

  • Add the garlic and spices and continue to cook for another minute

  • Add the lentils, stock and carrots, and bring to the boil.

  • Cover and simmer for about 15 minutes, add the peas and simmer for a further 5 mins (20 mins simmering in total)

  • Stir in the lemon juice and salt to taste.

  • Stir in the fresh coriander and almonds.

  • Serve with chapattis, naan or rice.
