This dhal recipe is super easy to make, warming and has a lot of flavour and fab nutrients. It's high in fibre, protein and packed with vitamins. A great mid week recipe and for fueling the body for life and exercise! I forgot to take a pic when I made this but will do next time!
Ingredients (serves 2):
1 tbsp olive oil
1 chopped onion
1 crushed garlic clove
Half tsp ground cumin
1tsp ground coriander
125g red lentils
400ml veg stock
2 diced carrots
125g frozen peas
Big squeeze of lemon juice
Salt to taste
Handful of fresh chopped coriander
50g almonds roughly chopped and toasted
Heat the oil in a heavy based pan and saute the onions for 5 mins
Add the garlic and spices and continue to cook for another minute
Add the lentils, stock and carrots, and bring to the boil.
Cover and simmer for about 15 minutes, add the peas and simmer for a further 5 mins (20 mins simmering in total)
Stir in the lemon juice and salt to taste.
Stir in the fresh coriander and almonds.
Serve with chapattis, naan or rice.
