Really easy to make and great to keep in the freezer for a snack on a hot day or post workout!
With yoghurt, honey, fruit and nuts - you've a nutritious snacks ready to go. Protein, vitamins and minerals, whats not to like? The pecans are sweet and buttery, so make a really nice nut addition but you could experiment with any nut and fruit that takes your fancy.
Ingredients (no quantities as depends on your tray size!):
Greek yoghurt (I used a mix of 0% and 5% just because they needed using up)
Chopped strawberries
Blueberries
Chopped pecans
Honey
Squeeze of lime
Method:
Mix the yoghurt, lime juice and honey in a bowl
Pour into a small baking tray and spread out evenly
Scatter in your fruit and nuts and press down if needed
Freeze overnight or for at least 4 hours
Turn upside down and bash out frozen block - like an ice cube
Break up into chunks and stick in the freezer for when you want to use them
