Frozen yoghurt 'brittle'

Really easy to make and great to keep in the freezer for a snack on a hot day or post workout!

With yoghurt, honey, fruit and nuts - you've a nutritious snacks ready to go. Protein, vitamins and minerals, whats not to like? The pecans are sweet and buttery, so make a really nice nut addition but you could experiment with any nut and fruit that takes your fancy.


Ingredients (no quantities as depends on your tray size!):

  • Greek yoghurt (I used a mix of 0% and 5% just because they needed using up)

  • Chopped strawberries

  • Blueberries

  • Chopped pecans

  • Honey

  • Squeeze of lime


Method:

  • Mix the yoghurt, lime juice and honey in a bowl

  • Pour into a small baking tray and spread out evenly

  • Scatter in your fruit and nuts and press down if needed

  • Freeze overnight or for at least 4 hours

  • Turn upside down and bash out frozen block - like an ice cube

  • Break up into chunks and stick in the freezer for when you want to use them
