Such a fab salad for summer and really nutritious with healthy fats and omega 3's from the avocado, olive oil and walnuts, and of course the vegetables give you fibre and vitamins / minerals galore.
Ingredients (serves 2):
1 romaine lettuce
1 red pepper sliced
1 carrot grated
1/2 a small cucumber
6 cherry tomatoes halved
1 ripe avocado
75-100g goats cheese
50g chopped walnuts
Dressing:
1tbsp lime or lemon juice
1 crushed garlic clove
1-2 tbsp extra virgin olive oil
Method:
Roughly chop up lettuce and put into a bowl with the peppers, carrots, cucumber and tomatoes.
Halve, pit and chop up the avocado, then add it to the bowl
Mix the dressing ingredients together. Pour over the salad and toss
Crumble over the goats cheese and add the chopped walnuts.
