Goat's cheese, avocado and walnut salad

Such a fab salad for summer and really nutritious with healthy fats and omega 3's from the avocado, olive oil and walnuts, and of course the vegetables give you fibre and vitamins / minerals galore.

Ingredients (serves 2):

  • 1 romaine lettuce

  • 1 red pepper sliced

  • 1 carrot grated

  • 1/2 a small cucumber

  • 6 cherry tomatoes halved

  • 1 ripe avocado

  • 75-100g goats cheese

  • 50g chopped walnuts

Dressing:

  • 1tbsp lime or lemon juice

  • 1 crushed garlic clove

  • 1-2 tbsp extra virgin olive oil



Method:

  • Roughly chop up lettuce and put into a bowl with the peppers, carrots, cucumber and tomatoes.

  • Halve, pit and chop up the avocado, then add it to the bowl

  • Mix the dressing ingredients together. Pour over the salad and toss

  • Crumble over the goats cheese and add the chopped walnuts.
