Granola, fruit and yoghurt cups

These are both yum and fun! Quick and easy to make, and I've found they keep / store well too.

Fruit, yoghurt and granola (I usually make my own) is one of my favourite breakfasts (or post workout re-fuel) and this is a twist on that. You can use whatever toppings you like too!

Ingredients (makes approx 9):

  • 145g oats

  • 75g nuts and seeds of your choice

  • 1 tsp cinnamon

  • 1 tbsp chia seeds

  • Pinch of salt

  • 2 tbsp melted coconut oil or butter

  • Half a mashed banana

  • 2 tbsp milk of your choice

  • 2 tbsp honey / maple syrup


For the toppings:

  • 1 tbsp of greek yoghurt for each 'cup'

  • Chopped fruit of your choice

  • Optional: nut butters, shredded coconut, seeds, nuts etc.


Method:

  • Heat oven to 160 degrees F

  • In a bowl, mix together the oats, nuts / seeds, cinnamon, salt and melted oil / butter.

  • Add in the mashed banana, milk and honey / syrup and mix well. Sit for 10 mins.

  • Grease a muffin tray

  • One the mixture is thickened, distribute it out between cups in the muffin tray. Press in to the sides and bottom to give it it's 'cup' shape.

  • Bake in the oven for 15-25 mix until golden brown and crunchy.

  • Leave to cool before removing from the tray.

  • When ready to serve, dollop in a tbsp of greek yoghurt in to each cup and top with your favourite fruit and extras!
