Granola, fruit and yoghurt cups

These are both yum and fun! Quick and easy to make, and I've found they keep / store well too.
Fruit, yoghurt and granola (I usually make my own) is one of my favourite breakfasts (or post workout re-fuel) and this is a twist on that. You can use whatever toppings you like too!

Ingredients (makes approx 9):
145g oats
75g nuts and seeds of your choice
1 tsp cinnamon
1 tbsp chia seeds
Pinch of salt
2 tbsp melted coconut oil or butter
Half a mashed banana
2 tbsp milk of your choice
2 tbsp honey / maple syrup
For the toppings:
1 tbsp of greek yoghurt for each 'cup'
Chopped fruit of your choice
Optional: nut butters, shredded coconut, seeds, nuts etc.
Method:
Heat oven to 160 degrees F
In a bowl, mix together the oats, nuts / seeds, cinnamon, salt and melted oil / butter.
Add in the mashed banana, milk and honey / syrup and mix well. Sit for 10 mins.
Grease a muffin tray
One the mixture is thickened, distribute it out between cups in the muffin tray. Press in to the sides and bottom to give it it's 'cup' shape.
Bake in the oven for 15-25 mix until golden brown and crunchy.
Leave to cool before removing from the tray.
When ready to serve, dollop in a tbsp of greek yoghurt in to each cup and top with your favourite fruit and extras!
