Granola squares - apple and cinnamon

These are great for breakfast on the go or a quick pre workout fuelling! Naturally sweetened with the apples and the dates, plus a great dose of fibre, omega 3, iron and zinc.

Ingredients (makes about 16 squares):
2 apples, peeled cored and roughly chopped (any eating apple will do)
125g pitted medjool or soft dates
100g nut butter (and type you like)
100ml milk or plant based milk (I used almond)
175g rolled oats
45g ground flaxseed
2 tsp cinnamon
75g seeds - I used pumpkin seeds
75g chopped nuts (optional extra - I used chopped walnuts)
Method:
Preheat oven to 180/160 (fan) degrees and line a 20cm square baking tin with baking paper
Put the apples, dates, nut butter and milk into a food processor and blitz until the mixture is relatively smooth and puree like
In a large bowl, add the remaining ingredients and then add the puree mixture and combine well
Press the mixture into the tin and bake for approx 30 mins until the mixture is firm and golden brown
Allow to cool before cutting in to 16 squares
You can store in the fridge for up to a week in an air tight container. Or they freeze well too.
Nutrition wise, each square is about 190 kcals and 6g of protein, 11g fat, 15g carbs, 3g fibre.
