Halloumi & red pepper salad

Here is a great salad for the summer - lots of fresh vegetables including peppers and tomatoes for lots of nutrients including vitamin C. Plus avocado, olive oil and pine nuts for healthy fats. Halloumi is slightly lower in fat than most hard cheeses, plus when it's grilled, BBQ'd or fried, it is lovely and crispy on the outside.


Ingredients (serves 2):

  • 125g halloumi

  • 2 tbsp pine nuts toasted

  • 2 large handfuls of mixed salad leaves

  • 1 red pepper sliced

  • 150g cherry tomatoes, halves

  • 1 avocado sliced

  • 1tbsp extra virgin olive oil

  • A squeeze of lemon juice

  • Salt and freshly ground black pepper


Method:

  • Heat a griddle pan or frying pan over a high heat. Cut the halloumi into thick slices and fry for 1-1.5 mins each side until golden. Set aside.

  • Toast the pine nuts in the dry frying pan

  • Arrange the salad leaves on two plates.

  • Scatter over the peppers, tomatoes and avocado.

  • Arrange the halloumi on top.

  • Mix together the oil, lemon juice and seasoning, and drizzle over the top of your salad.

  • Scatter over the pine nuts.
