Homemade bagels - savoury & sweet

So I saw this idea on social media (@doctorbowl thank you) and I loved the sound of it - just a few ingredients, made really quickly, and no weird and 'not so' wonderful preservatives etc. And I love bagels, so I was very keen to try it. I'm converted, and will be trying a range of combinations to see what the family and I like. These pics are also of the first ones I made, so clearly didn't make the hole big enough as looks more like a roll - I will perfect this!


Savoury ingredients:

  • 120g self raising flour

  • 250g cottage cheese (can blitz to make smoother) or try plain yoghurt (not tried that yet, but will do!)

  • 1 egg / milk for wash / glaze

  • seeds for topping e.g sesame (optional)


Sweet ingredients:

  • 1 ripe banana

  • 190g self raising flour

  • 150g cottage cheese (or could use another banana or plain yoghurt

  • 1 tsp cinnamon

  • 1 egg / milk for wash / glaze


Method:

  • Mix all the ingredients in a bowl until combined

  • On a flour surface, knead until smooth

  • Make into a ball, and cut into quarters

  • Each quarter, make into a ball.

  • Make a whole in the middle and pull the dough out into a bagel shape

  • Wash with the milk / egg and place on a baking tray

  • Bake at 180 degrees for ~25 mins until golden brown. Or I put mine in the air fryer at 170 for around 17 mins.


Allow to cool and enjoy. They're great eaten or warm. If eating on subsequent days, toasting them is delicious.
