Homemade Granola

Granola is a cereal that is often branded as 'healthy' but can have loads and loads of added sugars and oils that ! I started to make my own a year or so ago now and I love it. Plus I know exactly what's in it - yes it has oil and sugar in but not to excess and maple syrup is strong tasting so you don't need a huge amount to get the flavour. This recipe makes a big batch so half if you want to give it a go.




Ingredients:

  • 300g jumbo oats

  • 300-400g nuts / seeds - my favourites are pecan and walnuts (I usually chop these up a bit), sunflower and pumpkin

  • 2 or 3tbs of maple syrup

  • 2 tbs of coconut oil (can use another oil if not a coconut fan!)

Optional:

  • Chopped dried fruit added before or after cooking depending on your preference


Method:

  • Heat oven to around 160 degrees F

  • Mix the oats, nuts and maple syrup together in a bowl

  • Using two large baking sheets put 1tbs of oil in each and pop in oven to melt / heat a little

  • Share the oat / nut / syrup mixture between the two trays

  • Cook in the oven, shaking or turning the mixture a couple of times until golden brown / crunchy. Approx 20-30 mins depending on how spread out your mixture is

  • Remove from oven and allow to cool before storing in an air tight container

Serve with whatever you like but I love it with yoghurt and fruit!
