My boys love a bit of cooking / baking and I found this recipe for fairly healthy chocolate chip cookies! Everyone loves a chocolate chip, they're soft and chewy, and with the addition of oats they've got fibre and b vitamins that's usually missing from the usual shop bought chocolate chip cookies!
Ingredients (makes 12, and easily halved):
100g olive oil spread (I used bertolli)
75g brown sugar
25g clear honey or golden syrup
Half tsp of vanilla extract
100g plain white flour
100g rolled oats
50g chocolate chips
Method:
Heat oven to 190 / 170 (fan) degrees
Line a baking tray with baking paper
Mix together the olive oil spread, sugar and honey / golden syrup in a bowl until smooth, using either a wooden spoon or mixer.
Add the vanilla extract, flour and oats and mix until the mixture forms a dough.
Stir in the chocolate chips.
Roll the dough into 12 small balls (about the size of a golf ball / table tennis ball)
Put the balls about an inch apart on the tray(s) and flatten with the palm of your hand
Bake for around 12 mins until golden.
Allow to cool and then eat!
