Kinda healthy chocolate chip cookies

My boys love a bit of cooking / baking and I found this recipe for fairly healthy chocolate chip cookies! Everyone loves a chocolate chip, they're soft and chewy, and with the addition of oats they've got fibre and b vitamins that's usually missing from the usual shop bought chocolate chip cookies!


Ingredients (makes 12, and easily halved):

  • 100g olive oil spread (I used bertolli)

  • 75g brown sugar

  • 25g clear honey or golden syrup

  • Half tsp of vanilla extract

  • 100g plain white flour

  • 100g rolled oats

  • 50g chocolate chips


Method:

  • Heat oven to 190 / 170 (fan) degrees

  • Line a baking tray with baking paper

  • Mix together the olive oil spread, sugar and honey / golden syrup in a bowl until smooth, using either a wooden spoon or mixer.

  • Add the vanilla extract, flour and oats and mix until the mixture forms a dough.

  • Stir in the chocolate chips.

  • Roll the dough into 12 small balls (about the size of a golf ball / table tennis ball)

  • Put the balls about an inch apart on the tray(s) and flatten with the palm of your hand

  • Bake for around 12 mins until golden.

  • Allow to cool and then eat!
