Lemon herby chicken salad

This salad is high in protein, low carbohydrate and a healthy dose of nutritious fats. Perfect for the summer weather!

Ingredients (serves 2):

  • Approx 240g of 0% greek yoghurt

  • tsp dried mixed herbs

  • zest and juice of a lemon

  • 2 chicken breasts (approx 125-150g each)

  • One pepper roungly chopped

  • 1 red onion peeled and chopped

  • 2 large bowls of mxed salad leaves

  • 2 tbsp olive oil

  • 2 large handfuls of olives

  • Half a cucumber sliced

Method:

  • Heat the oven to 200/180 fan

  • Mix the yoghurt, herbs, lemon zest and half the lemon juice in a bowl

  • Put half the yoghurt mixture in another bowl and thoroughly coat the chicken breasts

  • Line a try with foil and place the chicken inside it, adding on top any leftover marinade

  • Add the peppers and onion around the chicken. Season with salt and freshly ground black pepper

  • Cook in the over for 20-30 mins until the chicken is thoroughly cooked and the juices run clear

  • Whilst the chicken is cooking, dress the salad leaves bowls and cucumber slices with the olive oil and remaining lemon juice, and add another pinch of mixed herbs if you'd like

  • Remove the chicken and veg from the oven and slice the chicken and add on top of the salad with the veg.

  • Add the olives and spoon over the reserved yoghurt mixture.
