Mexican bean quesadillas

These are a bit like a toastie but made with tortillas and beans. Is full of flavour and is quick and easy to make. A fab vegetarian, meal that is healthy and tasty at the same time!


Ingredients:

  • 1-2 tsp light olive oil

  • 1 small onion finely chopped

  • 1 red pepper chopped

  • 1 garlic clove crushed

  • 1 tsp fajita seasoning (or make your own: 2 tsp chilli powder, 1 tsp salt, 1 tsp paprika, half tsp brown sugar, 1 tsp ground black pepper, half tsp garlic powder, half tsp onion powder and half tsp ground cumin)

  • 1 tbsp tomato puree

  • 4 flour tortillas

  • 1 can of beans drained and rinsed (red kidney, pinto or black beans)

  • 1 sliced avocado

  • 60g grated cheddar cheese


Method:

  • Heat the oil in a large pan over a medium heat and cook the onion and peppers until soft and the onion is transulcent (approx 5 mins).

  • Add the garlic and fajita seasoning and cook for another minute

  • Add the tomato puree, beans and a tbsp of water

  • Heat through, then mash roughly with a potato masher or back of a fork

  • Spread the mixture out between 2 of the tortillas, and divide the avocado slices.

  • Scatter over the cheese, then top with the other two tortillas, pressing them together.

  • Heat a non-stick trying pan over a medium heat.

  • Cook each tortilla sandwich for about 1-2 ins each side until the cheese has begun to melt and the tortillas are crispy

  • Cut into quarters and serve a tomato and leafy salad (or salsa).
