These are a bit like a toastie but made with tortillas and beans. Is full of flavour and is quick and easy to make. A fab vegetarian, meal that is healthy and tasty at the same time!

1 small onion finely chopped
1 red pepper chopped
1 garlic clove crushed

1 tbsp tomato puree
4 flour tortillas
1 can of beans drained and rinsed (red kidney, pinto or black beans)
1 sliced avocado

Add the garlic and fajita seasoning and cook for another minute
Add the tomato puree, beans and a tbsp of water
Heat through, then mash roughly with a potato masher or back of a fork
Spread the mixture out between 2 of the tortillas, and divide the avocado slices.
Scatter over the cheese, then top with the other two tortillas, pressing them together.
Heat a non-stick trying pan over a medium heat.
Cook each tortilla sandwich for about 1-2 ins each side until the cheese has begun to melt and the tortillas are crispy
Cut into quarters and serve a tomato and leafy salad (or salsa).
