I love a good flapjack and these are great snacks - packed with energy and goodness.
Ingredients (makes 16 - easily halved)
75g butter or olive spread
75g crunchy peanut butter
75g honey
75g brown sugar (can leave out)
250g oats or museli
150g mixed nuts
75g mixed seeds
75g dried fruit (or more nuts)
Method:
Preheat oven to 180/160 fan and line a 20cm square tin with baking paper
Melt the butter / olive spread, honey and peanut butter (& sugar if using) in a pan over a low heat.
Mix the other ingredients in a bowl and then stir in the peanut butter mixture.
Press in to a lined baking tin, levelling out and squashing down with the back of a spoon
Bake in the oven for around 20 mins until golden brown.
Leave in the tin to cool and then turn out and cut into 16 squares with a knife.
Store in airtight container.
