Nutty flapjacks

I love a good flapjack and these are great snacks - packed with energy and goodness.

Ingredients (makes 16 - easily halved)

  • 75g butter or olive spread

  • 75g crunchy peanut butter

  • 75g honey

  • 75g brown sugar (can leave out)

  • 250g oats or museli

  • 150g mixed nuts

  • 75g mixed seeds

  • 75g dried fruit (or more nuts)


Method:

  • Preheat oven to 180/160 fan and line a 20cm square tin with baking paper

  • Melt the butter / olive spread, honey and peanut butter (& sugar if using) in a pan over a low heat.

  • Mix the other ingredients in a bowl and then stir in the peanut butter mixture.

  • Press in to a lined baking tin, levelling out and squashing down with the back of a spoon

  • Bake in the oven for around 20 mins until golden brown.

  • Leave in the tin to cool and then turn out and cut into 16 squares with a knife.

  • Store in airtight container.
