Oat, banana and peanut butter muffins

Here are some pretty quick and easy muffins to make for a breakfast on the go or snack (even an after school one for the kids). I love peanut butter and oats so all a bit of a win for me!
Ingredients:

2 eggs
250ml almond milk
250g oats
1 mashed banana
1 tsp baking powder
1/2 teaspoon cinnamon
1 tsp vanilla extract
pinch of salt
4 tsp melted coconut oil
1 heaped tbsp peanut butter
Honey about a tbsp for mixture and for drizzling on top
Walnuts to scatter over (optional)
Method:
Heat over to 190 degrees and either line a muffin tin with muffin cases or grease 12 holes.
In a big bowl mix together all the ingredients except the oats and walnuts. Whisk up together.
Stir in the oats
Pour the mixture in to the muffin tray (should make 12)
Sprinkle with the chopped walnuts and drizzle with honey
Bake in oven for 15-20 mins.
Allow to cool before removing from the tray.
