Oaty chocolate chip muffin cups

A great little energy boost or snack, could even be a breakfast on the go or after school snack for the kids.


Ingredients (makes approx 12):

  • 2-3 bananas mashed

  • 250g rolled oats

  • 475ml milk of your choice

  • 1 large egg

  • 100g chocolate chips

  • 3-4 tbsp honey or maple syrup

  • Half tsp cinnamon

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • Quarter tsp salt


Method:

  • Heat oven to 180 degrees, and grease / line a muffin tin

  • Mix together the dry ingredients in a bowl (oats, cinnamon, baking powder, salt)

  • Mix together the wet ingredients in another bowl (banana, milk, egg, honey, vanilla extract)

  • Combine the wet and dry ingredients and then gently stir in the chocolate chips

  • Fill the muffin tray, with each hole almost to the top

  • Bake in the oven for around 30 minutes until a skewer comes out clear

  • Remove from the oven, run a knife around the edge and allow to cool before removing
