A great little energy boost or snack, could even be a breakfast on the go or after school snack for the kids.
Ingredients (makes approx 12):
2-3 bananas mashed
250g rolled oats
475ml milk of your choice
1 large egg
100g chocolate chips
3-4 tbsp honey or maple syrup
Half tsp cinnamon
1 tsp baking powder
1 tsp vanilla extract
Quarter tsp salt
Method:
Heat oven to 180 degrees, and grease / line a muffin tin
Mix together the dry ingredients in a bowl (oats, cinnamon, baking powder, salt)
Mix together the wet ingredients in another bowl (banana, milk, egg, honey, vanilla extract)
Combine the wet and dry ingredients and then gently stir in the chocolate chips
Fill the muffin tray, with each hole almost to the top
Bake in the oven for around 30 minutes until a skewer comes out clear
Remove from the oven, run a knife around the edge and allow to cool before removing
