Pizza is absolutely one of my favourite foods, and one day, being faced with leftover fajitas tortillas I experimented with using those a pizza base. They're a great and super easy alternative to this usually high salt, high fat takeaway meal. No, they're not quite the same as scoffing at Pizza Express, but my family have enjoyed this healthier (and cheaper) variation. And you can stick on top whatever you fancy, or in my case, whatever you have left in the fridge! Plus its something for the kids too - who doesn't enjoy making their own pizza!
Ingredients:
Tortilla wraps - I've experimented with all the sizes depending on how hungry I am and what I've got leftover!
Passata - I've used plain and a herb one before, and you need about 2 or 3 tbsp. per tortilla depending on size. Sprinkle over oregano if using plain passata.
Then the toppings are really whatever you fancy. I've used spinach (cooked on hob before), egg, ham, olives, sundried tomato, peppers, onions, cheddar, mozzarella.
Method:
Preheat oven to fan 180 degrees C.
Put tortilla on a baking tray
Spread out 2-3 tbsp. of passata evenly over the tortilla
Sprinkle oregano over and season with salt and pepper
Scatter over your toppings.
Bake in oven for around 10 minutes or for you preferred level of crispiness!
Put on a wooden board or plate, slice up and tuck in!
