Prawn & chorizo frittata

Frittata is one of my 'go to' dishes when I either don't have a lot of time or when there is not a lot in the fridge! There are also so many ways you can mix up your flavours and ingredients. Here is one combo that I like - prawn and chorizo. Served with a big leafy salad it's quick, easy and tasty.


Ingredients (serves 2):

  • Half a large onion or one small onion, finely chopped

  • 4 eggs, beaten

  • A splash olive oil (about 0.5 tbsp)

  • 50 g chorizo, chopped

  • 1 tbsp milk

  • 100g frozen peas - defrosted ideally but don't worry if you've not done that

  • 100g prawns (cooked or raw - can cover both scenarios!)

Method:

  • Heat up your grill ready to go - medium temperature

  • In a 20cm frying pan, heat the oil and fry the onion over a low - med heat for 2-3 mins

  • Add the chorizo (and prawns if using raw) and cook for a furher 2-3 mins until the onion is soft (and prawns are all pink & cooked through)

  • Add in the peas and stir in (you will need to cook for a little longer if they weren't defrosted)

  • Take the pan off the heat and pour out any excess oil or fat from the chorizo

  • If using cooked prawns add them to the pan now

  • Season the beaten eggs to your taste and pour into the pan along with the milk, mix everything together and allow to cook on a low heat for approx 10-12 mins until all but the top of the frittata is set

  • Put the pan under the grill until the top is now golden (be careful with the pan handle)

  • Remove from the grill, serve as wedges with a big leafy salad
