Protein bars

I was hunting around on the internet for another homemade protein bar recipe and came across one that I've tweaked a bit to suit what I had in the cupboard / what I like. There are only 4 ingredients to this and doesn't require baking! Shop bought protein bars are super expensive and also loads of random ingredients in so here is a great alternative if you're thinking about making your own. Each bar is probably about 150-200 calories and 20g of protein.


Ingredients (makes 12):

  • 60g ground almonds / oat flour (blitzed oats) / coconut flour (those pictured use ground almonds)

  • 2 scoops of protein powder (your choice on type and flavour) - I've gone with whey chocolate here

  • 500g peanut butter (no added sugar options, I use Aldi's own brand - the 100% peanuts one)

  • 110g maple syrup

  • optional chocolate for coating / drizzling


Method:

  • Line a square / rectangle baking tin with baking paper

  • In a bowl mix together all the dry ingredients (flour & protein powder)

  • Gently heat to melt the peanut butter and maple syprup together so they're combined and runny

  • Add to the dry ingredients and stir until fully mixed

  • Transfer the mixture to the baking pan and press down / level out.

  • Refridgerate or freeze until firm and then cut in to bars

  • Can coat in optional melted chocolate - I've drizzled dark chocolate over the top of these ones in the picture

  • Store in the fridge for up to two weeks, and can also freeze. Best eaten at room temperature though.
