I made these kind of by mistake the other day when I found I had some tortillas hanging around that needed using up, and wanted us to have a tasty vegetarian meal ahead of the weekend of probably meat heavy BBQs. It is pretty flexible what you put in these, I added in a load of salad, some grated cheese and some greek yoghurt (I use this instead of sour cream) with chipotle sauce mixed in. The photo is before I added those bits in!
Ingredients (makes 2 or 3):
1 red onion thinly sliced
300g ish mushrooms sliced
1 large red pepper (or two small) thinly sliced
0.5 tbs olive oil
2 tsp cumin
2 tsp ground coriander
2 tsp smoked paprika
Salt for seasoning
Warm tortillas
Greek yoghurt
Chipotle sauce (optional but I like as its a bit spicy)
Optional fillings of your choice such as fresh coriander, salad leaves or cheese
Method:
Heat your grill to the max
Put the mushrooms, peppers, and onion on to a big grill tray that is large enough so it is more single layer than everything piled on top
Mix with the spices & olive oil and season with the salt
Grill for 5-10 minus until the peppers have charred and the onions and mushoroms softened
If using, mix in a dollop of chipotle sauce into 2-3 tbs of greek yoghurt
Spread warm tortilla with the greek yoghurt (& chipotle) mix and add some of the veggie mix and your optional toppings
Wrap and enjoy!
