Scrambled eggs another way

This is a quick and easy alternative way of jazzing up your scrambled eggs and getting some brilliant nutrients in at the same time. Very easy to prepare and can be a great breakfast or lunch.

Ingredients (serves 1):

  • Half a small red onion diced or roughly chopped

  • Half an avocado, peeled and diced

  • tsp butter

  • 3 eggs

  • tomato or a few cherry or plum tomatoes, chopped

  • Salt and pepper to season

  • Optional chilli flakes or chopped red chilli


  • Melt the butter in a frying pan and add the onion and gently cook until softened, add the chilli if using

  • Crack three eggs in to the pan and scramble together with the onion, season with salt and pepper to taste

  • Add to a plate and top with the chopped avocado and tomato
