This is a quick and easy alternative way of jazzing up your scrambled eggs and getting some brilliant nutrients in at the same time. Very easy to prepare and can be a great breakfast or lunch.

Ingredients (serves 1):
Half a small red onion diced or roughly chopped
Half an avocado, peeled and diced
tsp butter
3 eggs
tomato or a few cherry or plum tomatoes, chopped
Salt and pepper to season
Optional chilli flakes or chopped red chilli
Method:
Melt the butter in a frying pan and add the onion and gently cook until softened, add the chilli if using
Crack three eggs in to the pan and scramble together with the onion, season with salt and pepper to taste
Add to a plate and top with the chopped avocado and tomato
