This is a dish I've adapted a bit from one of Joe Wick's quick recipes. I've often got the ingredients kicking around in my fridge / cupboard so its one of those I can fling together last minute.
Ingredients (2 two people):
Half a tbs of oil - I use olive, coconut or avocado
1 red onion chopped
2 garlic cloves chopped
1 v large or 2 normal sized red or yellow peppers, sliced
3 heaped tsp smoked paprika
2 tsp dried oregano
400g ish chicken breast fillet sliced / chunked depending on preference!
8-10 cherry or baby plum tomatoes, cut in half
30g blanced almonds
A few large handfuls of spinach
Salt and pepper
A lemon - squeeze for juice
Method:
Heat oil in frying pan / wok over medium heat
Add onion, garlic and red pepper and fry for a couple of mins til start to soften
Add smoked paprika and organo and coat the veg
Increase heat and add chicken and tomatoes, stirring regularly for around 4 mins til chicken is cooked through
Stir in almonds and spinach and cook for a couple of mins until spinach has wilted
Season with salt and pepper and add lemon juice
Serve up!
Can be eaten alone or add a side of salad, spinach, broccoli, mange tout, sugar snaps, green beans... the list goes on!
