Speedy chicken dinner

This is a dish I've adapted a bit from one of Joe Wick's quick recipes. I've often got the ingredients kicking around in my fridge / cupboard so its one of those I can fling together last minute.



Ingredients (2 two people):

  • Half a tbs of oil - I use olive, coconut or avocado

  • 1 red onion chopped

  • 2 garlic cloves chopped

  • 1 v large or 2 normal sized red or yellow peppers, sliced

  • 3 heaped tsp smoked paprika

  • 2 tsp dried oregano

  • 400g ish chicken breast fillet sliced / chunked depending on preference!

  • 8-10 cherry or baby plum tomatoes, cut in half

  • 30g blanced almonds

  • A few large handfuls of spinach

  • Salt and pepper

  • A lemon - squeeze for juice


Method:

  • Heat oil in frying pan / wok over medium heat

  • Add onion, garlic and red pepper and fry for a couple of mins til start to soften

  • Add smoked paprika and organo and coat the veg

  • Increase heat and add chicken and tomatoes, stirring regularly for around 4 mins til chicken is cooked through

  • Stir in almonds and spinach and cook for a couple of mins until spinach has wilted

  • Season with salt and pepper and add lemon juice

  • Serve up!

  • Can be eaten alone or add a side of salad, spinach, broccoli, mange tout, sugar snaps, green beans... the list goes on!
