Speedy prawn stir fry

Super simple but always one of my 'go to' dishes when I've not got much time or can't really be bothered to think! This really hits both the protein and fibre requirements and also lots of micronutrients from all the veg. So easy to make and really nutritious. Plus lots of 'cheat' options to extra speed such as ready chopped garlic, chilli and stir fry veg.


Ingredients:

  • 2 tbsp sesame oil

  • 1 large red chill chopped (or use ready chopped frozen)

  • 2 tsp chopped, crushed or "lazy garlic"

  • Approx 300g raw prawns (peeled etc)

  • 2 handfuls of mushrooms (any type)

  • 2 large handfuls of beansprouts

  • 1 small red onion peeled and sliced

  • 1 red pepper chopped

  • 2 large handfuls of green cabbage, chopped

  • (or instead of the veggies, just use a ready prepared stir fry veg packet (approx 300g)

  • 2 tbsp light soy sauce

  • 2 small handfuls of peanuts or cashews roughly chopped

  • Optional - serve with rice and noodles, or leave out for a lower carb option.


Method:

  • Heat the sesame oil in a wok or large frying pan over a high heat

  • Add the chilli and garlic

  • Add the prawns and stir until they turn pink

  • Add the veg and cook for a few minutes depending on how crunchy you like it!

  • Add the soy sauce and continue to stir

  • Serve into bowls and top with the nuts.
