Spinach & butter bean burgers

I made these vegetarian burgers when I had an excess of spinach and not a lot else in the fridge! The spices give these a good flavour and the butter bean and spinach combo provide lots of protein, iron and fibre.

Ingredients (makes 8):

  • 1 small onion, roughly chopped

  • 1-2 crushed garlic cloves

  • 400g can of butter beans, drained and rinsed

  • 50g oats

  • 1 tsp ground cumin

  • 1 tsp sweet paprika

  • Juice of half a lemon

  • Salt and freshly ground black pepper

  • 100g baby spinach

  • 1 egg

  • 2 tbsp mixed seeds

  • Olive oil


To serve: burger buns, salad of your choice



Method:

  • Preheat oven to 190/170 (fan)

  • Put the onion, garlic, butter beans, oats, spices, lemon juice and a large pinch of salt and black pepper into a food processor and process until combined

  • Add a handful of spinach at a time and process / pulse until combined

  • Add the egg and process for a few more seconds

  • Stir in the mixed seeds, add any seasoning if necessary to taste

  • Shape mixture into 8 balls and place on an oil baking tray.

  • Flatten with your palms and brush with a little olive oil

  • Bake in the oven for approx 20 mins until crisp on the outside

  • Serve in a bun with your salad of choice!
