I made these vegetarian burgers when I had an excess of spinach and not a lot else in the fridge! The spices give these a good flavour and the butter bean and spinach combo provide lots of protein, iron and fibre.
Ingredients (makes 8):
1 small onion, roughly chopped
1-2 crushed garlic cloves
400g can of butter beans, drained and rinsed
50g oats
1 tsp ground cumin
1 tsp sweet paprika
Juice of half a lemon
Salt and freshly ground black pepper
100g baby spinach
1 egg
2 tbsp mixed seeds
Olive oil
To serve: burger buns, salad of your choice
Method:
Preheat oven to 190/170 (fan)
Put the onion, garlic, butter beans, oats, spices, lemon juice and a large pinch of salt and black pepper into a food processor and process until combined
Add a handful of spinach at a time and process / pulse until combined
Add the egg and process for a few more seconds
Stir in the mixed seeds, add any seasoning if necessary to taste
Shape mixture into 8 balls and place on an oil baking tray.
Flatten with your palms and brush with a little olive oil
Bake in the oven for approx 20 mins until crisp on the outside
Serve in a bun with your salad of choice!
