Super seedy energy bars

I think this might be my favourite snack bar that I've made to date - really really easy and the kids like them too #winning. Packed full of fibre, B vitamins, protein, omega-3, vitamin E, iron and zinc. Plus you could drizzle with melted dark chocolate - I'm totally going to try this for my next batch, and I think it will really help satisfy any pre-menstrual cravings too.


Ingredients (makes 8):

  • 125g mixed seeds (I just used a mixed bag from Tesco)

  • 100g mixed nuts

  • 25g ground almonds or flaxseed

  • 25g oats

  • 1 tsp vanilla extract

  • Half tsp cinnamon

  • 60ml honey or maple syrup

  • Optional melted dark chocolate to coat


Method:

  • Preheat oven to 180 degrees / 160 fan.

  • Line a small baking dish with baking paper approx 15 x 8cm (or a 900g (18 x 6 cm) loaf tin if you've gone one)

  • Put all the seeds, nuts, flaxseed / ground almonds, vanilla extract, cinnamon, oats and honey / syrup in a large mixing bowl and mix together well.

  • Spoon in to the dish and press down firmly making sure there are no gaps and it is pretty compressed

  • Bake for about 30 mins until lightly golden

  • Take out of the oven and press down again with a big spoon and then allow to cool

  • Cut in to 8 bars and store in air tight container for up to 7 days.
