This is SO easy and so quick to make and really tasty - if you like mushrooms that is, I know they can divide the population! Mushrooms are have anti-imflammortory properties and are also a source of vitamin D, so really quite nutritious for a bit of fungi!
Ingredients:
1 onion, chopped
Vegetable stock - about 500ml (experiment with how liquidy you like it)
A punnet of mushrooms - any type!
Bit of oil or butter
Crème fraiche, yoghurt, cream or coconut cream (optional)
Method:
Melt oil / butter in a large pan
Sauté the onions and mushrooms for 3-5 mins until softened
Add the stock, bring to the boil then simmer for 10 mins
Season if required
Add an optional couple of spoons of crème fraiche/ coconut cream etc if you want the 'cream of mushroom' style!
Blend either in blender or using a hand blender (if the former make sure its cooled a bit before you do this)
Serve. Can always add a dollop of your choice of cream afterwards if this takes your fancy!
