Veggie burgers

Super easy to make - 10 mins to prep and 25 mins to bake, these burgers are a great way to get some more plants in to your diet and make a great lunch alternative. You can experiment too with different spices and flavours depending on what you like.
Ingredients (makes 8):

400g chickpeas drained and rinsed
40g oats
2 carrots roughly chopped
Half tsp each of cumin, ground coriander, and paprika
Salt and freshly ground black pepper
Small handful of chopped coriander
1 egg
2 tbsp each of sunflower seeds and pumpkin seeds (or any seeds you like really)
Olive oil for brushing
Method:
Preheat oven to 190/170 (fan)
Put all ingredients except the egg and seeds into a food processor and blitz until all combined.
Add the egg and process for another 10-15 seconds
Transfer the mixture to a large blow and stir in the seeds.
Shape the mixture into 8 'burgers' and place on a oiled baking tray
Brush burgers wtih a little oilive oil
bake in the oven until crisp and golden for 25-30 mins
Serve with your choice of salad, burger bun, sweet potato or with greek yoghurt.
